Heirloom Tomato, Feta, White Bean & Fresh Herb Bake

Ingredients


1 block feta (preferably Quebec-made and not too salty, or fresh cheese if preferred)

2–3 large heirloom tomatoes, cut into wedges

1/4 to 1/2 cup olive oil

1 large white onion, cut into wedges or petals

1 head of garlic or 4 large cloves

1 sprig oregano

1 sprig basil

1 sprig thyme

Freshly ground black pepper

1 can white beans (drained and rinsed)




Instructions


Preheat oven to 400°F (200°C).

In a large oven-safe dish, ideally cast iron, place the white beans at the bottom. Add the tomatoes, onions, and garlic on top. Arrange the sliced feta block over everything, then drizzle generously with olive oil to cover the ingredients. Add the herbs and season with pepper.

Bake for about 25–30 minutes, until the tomatoes are roasted and starting to break down, and the top is lightly golden.

Serve with warm sourdough bread and a simple salad: lettuce, olive oil, lemon juice, salt, pepper, a few apple slices, and thinly sliced fresh shallots.
