Veggie Pizza with Hearts of palm, beets and spinach

Ingredients
2 naan breads
2 tbsp Greek yogurt
1 tbsp olive oil
2 garlic cloves, finely chopped
1 cup fresh spinach
3 hearts of palm
4 small beets
1/4 cup feta or goat cheese
1/2 cup sharp cheddar, grated
a few fresh basil leaves
salt and pepper

Preparation
Start by cooking the beets, since they take the longest. Rinse them, wrap each one individually in aluminum foil, and place them directly on the oven rack. Bake at 350°F for about an hour, or until tender. Once they’re cooked, let them cool, peel them, and slice very thinly.
While the beets are cooking, prepare the yogurt base by mixing the Greek yogurt, finely chopped garlic, olive oil, salt, and pepper. Set aside. Slice the hearts of palm.
Place the naan breads on a baking sheet. Spread the yogurt sauce evenly over each one. Top with spinach, sliced hearts of palm, and the cooked beet slices. Add the cheese — feta or goat cheese, then a bit of grated cheddar for a crispy finish. Add a few fresh basil leaves on top.
Bake at 400°F for about 10 to 12 minutes, until the cheese is melted and golden. Serve hot, with a bit of the same yogurt sauce on the side if you like.
